The color is a old yellow gold with a touch of amber.
The well rippened grapes of Vermentino, are picked up by hand late in the season, but always when the climatic conditions are the most favourable for fermentation, of at least a partial mould creation.
After resting for a brief period in the store house, the grapes are manually pressed using small old fashioned vertical presses.
